Here's an appetizer I've been toying with recently.
Blue Cheese, Bacon, and Pear Crostini
1 baguette
butter
4 oz. cream cheese
4 oz. blue cheese
3 pears
6 slices of bacon
1 sprig of rosemary
black pepper
salt
sugar
Cut the baguette on the bias into 1/4" slices. Brush with melted butter and toast in the oven until golden brown and crunchy.
Dice the pears and reserve half for later. Put the other half in a pan with butter and a little sugar and caramelize over med-low heat. When the pears are almost done (syrupy, brown, and almost falling apart), throw the rosemary in for the last few minutes (don't strip the leaves off, just throw the whole stick in the pan). Remove the rosemary and season with salt and pepper. Move pears into a mixing bowl.
Clean the pan and then fry the bacon until crispy. Pat with a paper towel. Chop the bacon into small pieces and mix with the caramelized and fresh pears.
In separate bowl, mix cream cheese and blue cheese together.
Spread cheese mix on the crostini. Top with pear/bacon mix.
Eat.

that was my favorite part too, other than the part where this is delicious!! i'm glad you posted this, kittycat, because i dream of the day you made this on friend vaca.
